This is what is known as a varietal honey, meaning it is from a single nectar source. In this case, that nectar source is the Mesquite Tree. Often a ‘thorn’ in the side of most land owners, the mesquite tree can be a bountiful stop for pollinators. The tree produces hundreds of tassels of flowers, with each tassel containing hundreds of tiny flowers. The nectar from the Mesquite Tree creates a honey that is very light in color, and subtle in flavor, while being super sweet. And, if you use your imagination, you can detect a hint of that smokey flavor we associate with mesquite wood.
