Winter Wildflower honey is a departure from your traditional honey flavors. The floral sources that the bees visit in late fall have a higher mineral content, making them darker in color. Much like the color, the flavor is also much more intense, ranging from rich and bold to almost bitter. At times, it can be more like molasses than it is like honey. Naturally, it goes wonderfully poured over hot pancakes!
